Pollo con limón

Translating a Quote from my home country, Germany, which goes as follows “… it does not always happen as one wants or has planned”. This applies to our desire to travel to Europe on another 1-month long trip to countries we have already visited many times in the past and also to new countries, which are on our “bucket list”.

But since my health still does not allow me to travel so far abroad, I have decided to ‘visit’ those countries through my kitchen, i.e. trying to bring you easy recipes from those places.

So I am starting off with Spain. This was triggered by a telephone call from our friend Francesca in Madrid. And since we had taken our girls some time ago for a long family holiday to Madrid, we have very fond memories of some of the delicious, but so simple, dishes eaten in either our favourite ‘Bodegas’ or in the homes of some of our friends.

Francesca’s Mama one day made for us an easy Chicken dish for Lunch. And it only took her 45 minutes before we were able to sit at her table, accompanied by a chilled Cava ‘Segura Viudas’, lots of chit-chat and lots of laughter. Oh yes …… those were the days!

Pollo con limón

What you need: (for 4 people you can use 8 or more Chicken drumsticks)
8 x Chicken drumsticks, washed, dried and kept aside
500 g x Chorizo, skin removed and sliced
12 x (or more) Potatoes, peeled and cut like thick chips
2-3 x decent size red (for colour) Capsicum, halved, cleaned and cut into strips
Some lemon slices (skin removed)
2-3 x Cloves of Garlic (pounded slightly)
1x Bunch of Spring onions (the green part only) cut into small rings
Some Olive oil
Salt and black pepper (to taste)

How to make this dish

In a large pan heat the Olive oil, add the earlier prepared chicken drumsticks and brown those from all sides, take out and keep aside.

Now add the also earlier prepared potatoes and fry those lightly – add some salt.
Next add the Capsicum and Garlic and fry those too for a few minutes only. Now add the chicken drumsticks.
Turn down your heat and cook all this for appr. 30 minutes.

Before serving your “Pollo con limón” add all your Chorizo slices and fry for 5 minutes with your sliced lemon.
To serve, sprinkle the Spring onion greens over your Chicken and add some more Lemon halves.

That’s it – all done. Ready to be enjoyed.

Hot and Sweet Chicken-breast

This week has been a bit crazy – in other words, there were never enough hours in the day to do even a fraction of the things either of us wanted or had to do.
Frequent power-cuts (due to the heavy onset of the refreshing monsoon) did not help either – and today, when I am writing this, it is only Thursday – so more to come.

So therefor I will not keep you busy as well by having to look at a long post, instead here is another one of my “speedy-gonzales” recipes (kitchen is not being used that much right now).

It will take you maximum 20 minutes from start to finish.

For 2 people I used:

2 x Chicken breasts, cut into nice cubes

A few pieces of fresh pineapple, cut into cubes

2 x heaped Tbsp of Peanuts, crushed
1 x Tbsp liquid honey
1 ½ Tbsp of mustard (coarse grain)
1 shot of cream (or 2 if you like it creamier)
1 good sprinkling of curry powder
1 x Tbsp of Olive oil
Salt and pepper to taste

How to do:

Wok on medium heat, add oil and cubed chicken.

Stir and quickly fry for couple of minutes. Add honey, mustard, curry powder, salt and pepper and whilst stirring keep on cooking the chicken.

When ready carefully add the cream (don’t let it curdle) and the crushed peanuts. Simmer for a couple more minutes.
That’s it – serve with Rice or as in my pictures, with Penne and maybe some blanched spinach or broccoli.

Tips:
Place unsalted peanuts into your Mixy and ‘blitz’ only for a couple of seconds. Don’t make them smooth, you will want a slight bite.
This sauce is really simple but so nice, maybe you like to make a little bit more!?
If you have no fresh pineapple, then use tinned one.

Caribbean Sweet and Sour Mango Chicken

As I have mentioned somewhere before, when I lived for 3 years in the Caribbean (in Port-of-Spain/Trinidad), I too, like many of the other ‘diplomatic wives’ on this Island, went for a couple of weeks to a charming old Chinese Lady to learn the basics of ‘Chinese-cooking-with-a-wok’. Her name was Suzie Wong! Yes, film buffs of course will immediately connect this name with the very beautiful young actress Nancy Kwan, starring in her first film “The world of Suzie Wong”.

Wok cooking is so quick and easy to do – then why did I put this onto my kitchen back shelf for quite some years once we had left Trinidad, I kept asking myself. Maybe because I had nearly worn out my own Wok in those wonderful three years – and of course, living on the Island with its multi-racial population, who did not like Chinese food???

So now that I started writing easy to follow (I hope) recipes for elder daughter, living away from home, and her friends, my Wok has come into his own again – certain weeks with a vengeance!.

So here now a recipe which includes two of our favourite main ingredients – Chicken and Mango. I found this scribbled down note in my box of loose “Recipes from around the world” and immediately I decided late at night to make this for today’s Lunch.

Caribbean Sweet and Sour Mango Chicken

I used for 2-3 portions:

3 x Chicken breasts, cut into small pieces
1 x very large ripe mango peeled and cut free from its large seed and then cut into nice longish strips. Keep aside.
2 Tbsp good sunflower oil
12 x biggish shallots, peeled and thinly sliced
1.5 x tsp of fresh ginger, cut into long thin slivers
Some leeks, washed thoroughly and cut into thin rings
3 x garlic cloves, crushed well
1 x cups of green gram beansprouts

To make Sweet and Sour Sauce
2 x Tbsp white wine vinegar
4 x Tbsp of water
2 x Tbsp Toasted Sesame Oil
1 x Tbsp Dark Soy Sauce
2 x Tbsp clear honey
2 x Tbsp very good tomato ketchup
1 x tsp cornflour
2 x chicken stock cubes (I used KNORR), crumbled

First start making your sauce.

Combine all the above mentioned ingredients in a jug incl. the cornflour, which will slightly thicken the sauce. Set aside.

Heat up your Wok (or large frying pan) on medium flame, add oil and after 1 minute also the prepared chicken. Quickly brown the meat for maximum 3 minutes (keep stirring). Transfer with a slotted spoon into a small bowl and keep aside.
Into the same oil add the shallots and the ginger, stir for a couple of minutes only, after which you add your sauce and the mango.
Bring gently to the boil and continue simmering for another 2 minutes.

With this particular dish we like to alternate between long-grain basmati rice and Chinese noodles.

Thai Chicken with Aubergine

As some of my loyal readers know by now, my husband JS and I have a very special connection with Thailand, Bangkok in particular, which started way back in 2002.

We used to fly over nearly every year a couple of times spending each time up to a whole month just relaxing, seeing friends etc. and enjoying their food and culture.

Over the years we have visited many restaurants in this vibrant city and yes, we too have at least a couple which are our absolute favourites, one of which is the famous “BLUE ELEPHANT RESTAURANT” at 233 South Sathorn Road, Kwaeng Yannawa, Khet Sathorn, Bangkok. 10120.

On our last visit to Bangkok I was all scheduled to attend some Thai Cooking Classes at their equally famous and renowned School but unfortunately a health issue with me which kept cropping up forced us to fly home a bit earlier than planned and therefore I never managed to attend my classes, to which I was looking forward to so very much.

But, be rest assured, as soon as I can fly again, we will be off once again to Bangkok and I will make sure I can attend classes under the incredible tutelage of Master Chef Nooror and her team.

I wanted to clear out my fridge a little and when I saw chicken breast and Eggplant (Aubergine) I thought I treat myself, and hopefully you, too, to my own version of Thai

“Chicken with Aubergine”.

1 chicken breast, cut into bite sized pieces
1 whole aubergine, just washed and “topped & tailed”, into small cubes
80 g (approximately) of Green Curry Paste
150 ml Coconut cream
2 Kaffir Lime Leaves
1 Tbsp Fish Sauce
½ Tbsp sugar
2 large Chilli
Some fresh Basil
Oil – just a minimum

Method

Heat up Wok on medium heat with a little splash of Oil – add green curry paste.
Stir and when that lovely smell enters your nostrils, turn down heat to minimum.

Now add coconut cream.

Bring carefully to a boil and immediately add prepared chicken pieces, eggplant and the kaffir lime leaves. Also add fish sauce and a bit of sugar.
Stir gently and simmer for 5-8 minutes.
Garnish with chilli and fresh basil.
Ideally serve with Thai rice.

Carina’s Version of “Polpette al Sugo”

This is my very own quick version of a sort of “Polpette al Sugo” – the original we often have when back in Italy – nothing can beat those wonderful fresh Italian tomatoes and their addictive (at least for us) “ mozzarella di buffalo

Prep time 20 mins cooking time 45 mins Serves 4

1 lb. lean beef, minced 2 x (or Chicken, if you prefer)
1 x cup fresh white breadcrumbs
2 x garlic cloves, crushed
3 x Tbsp Parsley, chopped finely
Salt and pepper, to your taste
1x egg, slightly beaten
150 g x mozzarella cheese (cut into appr. 16 small cubes)
1x Tbsp vegetable oil
1 x large onion, finely chopped
400 g x fresh tomatoes, skin removed and squashed with your hands
1 x pack of spaghetti

1.. Take a bowl; add beef, breadcrumbs, garlic, half the parsley, salt and pepper and the egg, mix well.
2.. Take one of the previously cut cheese cubes and 1 large tsp of beef mixture and cover the cube with this.
3.. Take large pan, heat oil, add prepared meat balls and brown on all sides on medium heat.

4.. Add chopped onion, cook for 3-5 mins, and then add all the tomatoes with their juice. Simmer, cover with lid and cook for another 30 minutes.

5.. Uncover pan and continue cooking for another 10 mins, so that sauce will reduce and slightly thickens.

6.. While all this is going on, boil your spaghetti following packet instructions; but keep ‘tasting and testing’ – don’t overcook pasta.
7.. When done, drain and put into a slightly warmed big bowl.

8.. Serve with the Meat Balls, sprinkled with the remaining parsley, from a separate bowl.

NOTES:
With this I often just serve a nice crisp green salad or a tomato salad, which JS loves very much.

Also occasionally I add a couple of teaspoons of Curry powder to the meat mixture – it always depends who is coming and joins us for a meal. It really is purely a question of individual taste.

Of course you can also use tinned chopped tomatoes if you really have to.

‘TUSCAN CHICKEN WITH CAPERS’ or memories of Le Celle!

Once again, Easter came and went. Life here has turned very quickly back to its normal hectic happening, and with that for me the question “what to cook for the family and what to post on my Blog” became a sort of minor issue.

Instead of going to sleep at night I lay awake thinking what to shop, cook etc. etc. I wanted to go away for a little while from my Indian dishes – like going international; to places where we had been in the past and where we sampled the local food.

So, Chicken jumped into my mind (I love chicken, cooked any which way!) So, one quick look into my freezer and having found a pack of Drumsticks I then opened my fridge and found a freshly opened bottle of Capers. And with that my memory jumped back just a few years ago when Jo and I once again were staying in Florence, this beautiful city. During that holiday friends took us in their car out into the Tuscan country site past the little town of Cortona to the beautiful Convent de Le Celle, which is a 13th-century Franciscan Convent located in Le Celle, just outside Cortona. A visit never to be forgotten – so beautiful and peaceful.

On the way back we then briefly stopped in Cortona for a light lunch and when I saw this dish, Chicken with Capers, I simply had to try it. I love Capers and use it quite often in my cooking, especially with fish, eggs, etc. And also I had just seen the courtyard walls at Le Celle covered with Capparis spinosa, the caper bush but unfortunately for me the fruit was not matured enough to be picked.

Now back home here in Kerala I now like to cook this dish whenever I am able to find a jar of capers.
So, not to leave you too long in suspense, here is my re-creation of this delicious dish, which I named simply:

‘TUSCAN CHICKEN WITH CAPERS’ or memories of Le Celle!

For 2 people you will need:

4 chicken drumsticks (or more, if you are hungry)
1 large Onion, finely minced in your Mixy
Some salt and black pepper
Minced parsley, a very generous amount, app. ½ cup or so
2-3 Tbsp. of well-rinsed capers (whole)
Chicken broth, app. 1 ½ cup
3 Tbsp. of white wine vinegar
2 Tbsp Olive Oil
Some extra parsley for decoration.
How to cook:

Heat your Wok with ½ the oil over medium heat, add the minced onions with a sprinkling of salt, and cook until soft. Stir once in a while.
When cooked transfer onions to a plate. Add remaining oil to Wok and turn up heat slightly.

Now add your Chicken drumsticks (I like to rub them lightly with a mixture of salt and black pepper) and gently fry those all around until they are nicely golden. Remove and also keep on a plate.

Add onion puree, parsley and the capers to Wok, stir and cook for 2-3 minutes. After this add broth and vinegar (check, you might want to use a bit more or less of vinegar – depending on your personal taste), followed by the chicken drumsticks and their juices.

Gently stir, cover, keep heat on low and simmer until cooked to your liking.
Creamy mashed potatoes and some slightly steamed vegetables taste particularly good with this.
