CRAB – 20 Minuten!

“……… I DO THIS, MY WAY! …..”

Today my dear friends I invite you to Bangkok – for a visit to the largest outdoor market in the world – to be precise; to Chatuchak Weekend Market on Kamphaeng Phet 2 Road.

This market, also known as JJ Market is offering, with over 15,000 stalls, an eclectic variety of goods, from antiques to pets.

Going there is as much enjoyable as tiring – this place is literally huge, very crowded (even in the early mornings) and one can easily get lost in this rabbit warren of very narrow lanes.

But not to worry, there is always a smiling face helping you out and a place where to sit for “people watching” and, most of all, to enjoy one of their delicious foods.

My friend Yui one day invited me to accompany her to this Market since she wanted to buy a few items for her house in Bangkok. Good enough reason for me to have yet again another look at some of the stalls I was interested in on one of our previous visits to this vibrant city.

We arrived early, hoping to beat not only the rush of visitors but also the heat – but of course many people had the same idea and we found the place already somewhat crowded, but it did not spoil our fun at all.

After a few hours!! of walking, talking, bargaining and buying the items Yui had wanted, our feet started to object. What better idea than to go and have one of those wonderful foot massages, for which Thailand is famous for, amongst other things. I just love to have my feet massaged by a Professional that I, without fail, always fall asleep, but waking up totally rejuvenated.

Soon it was lunchtime and Yui took me to one of her favourite food stalls where she suggested I must try her friend’s Crab and Sweetcorn Soup. I do so love soups, of all kind (or nearly) and especially Thai soups.

Gratefully we sat down, ordered and very quickly a steaming bowl of my Crab soup arrived. It truly was so good, that I tried to make this at home once back here in India.

This dish is so easy to make and in fact only takes 20 minutes from start to finish.

So I will not let you wait much longer, but share with you my version of Chatuchak Crab and Sweetcorn soup.

Ingredients
(for 4 portions I used here…)

½ x pack of frozen Crabsticks (finely chopped)
¼ x pack of Thai Glass Noodles
½ x cup of frozen sweet corn
¼ x cup of the green only part of Spring Onions (finely chopped)
¼ x cup of Peanuts (dry fried)
1 ½ x cup of Vegetable Stock
1 x Tbsp Soya sauce
5 x Kaffir Leaves (or lime zest)
1 x Tbsp dry red chilli flakes (or more if you like the heat)
2/3 x Tbsp Lime juice
2 x tsp of Sesame Oil (or plain vegetable oil)
Salt (to taste)

How I made this:

In a large vessel I boiled the noodles in the vegetable stock with Sesame Oil.

Next I dry fried the peanuts, stirring all the time.

In a separate pan I sautéed, just for a couple of minutes, (in 1 tsp of oil) the chopped spring onion greens, the previously fried peanuts, Kaffir leaves, chilli flakes, lime juice and little bit of salt.

When this was done and the noodles cooked, I then transferred those to the above mixture and added the vegetable stock bit by bit to until I had the right liquid consistency.

Before serving I added all the chopped crabsticks and mixed everything well together and then served.

That’s it – enjoy.

Indian Spinach and Pork

As you well know by now I do have a pretty good relationship with my WOK.

For only 1 or 2 people producing a delicious meal in no time and with no fuss and most of all without lots of washing-up, a wok is the perfect tool for somebody who is always on the go and often running short of time.

So, therefore I share with you today my recipe for yesterday’s lunch.

I remembered I had bought a bunch of “Palak” the South Indian equivalent of our Spinach and it needed to be used fairly quickly. I also had some pork left over from a Pork Vindaloo dish. Some nice fresh peanuts I had just bought winking at me from their jar – and so very quickly I had assembled everything I needed and just 30 minutes later (that included the time to take some pictures for you to see) I was able to sit at the table and enjoy my “Spinach and Pork Stir Fry”.

So, for 1 slightly hungry person you will need:

3 x spring onions, I used only the white, cut into rings
1 x small piece of fresh ginger, very finely chopped
2-3 x garlic cloves, very finely chopped
Some pork (appr. 100 gr), cut into small mouth sized pieces
1 x Tbsp Soya sauce
1 x tsp Honey (or less if you don’t like it too sweet)
2 x tsp lemon juice
1 x bunch of fresh Palak or appr. 150-200 gr fresh spinach, well washed, keep aside in a colander to lose some of the water
1 x tsp Oil
1 x small handful of fresh Peanuts
Salt and Pepper to your taste

To cook:

Heat Wok with the oil on medium heat. After 2 minutes add your Peanuts, Garlic and Ginger, keep stirring, add Pork and continue stirring for app. 2 minutes or so.

Add the prepared Palak/Spinach and all the Spring onion rings; stir and cook for a further 2 minutes.

Mix honey, lemon juice and Soya sauce together and add to the wok. Finally check, and if needed, add salt and pepper.

Since I like my Palak/Spinach slightly crisp I continue cooking for 2-3 more minutes.

And that’s it! Ready. Serve with rice.

Hot and Sweet Chicken-breast

This week has been a bit crazy – in other words, there were never enough hours in the day to do even a fraction of the things either of us wanted or had to do.
Frequent power-cuts (due to the heavy onset of the refreshing monsoon) did not help either – and today, when I am writing this, it is only Thursday – so more to come.

So therefor I will not keep you busy as well by having to look at a long post, instead here is another one of my “speedy-gonzales” recipes (kitchen is not being used that much right now).

It will take you maximum 20 minutes from start to finish.

For 2 people I used:

2 x Chicken breasts, cut into nice cubes

A few pieces of fresh pineapple, cut into cubes

2 x heaped Tbsp of Peanuts, crushed
1 x Tbsp liquid honey
1 ½ Tbsp of mustard (coarse grain)
1 shot of cream (or 2 if you like it creamier)
1 good sprinkling of curry powder
1 x Tbsp of Olive oil
Salt and pepper to taste

How to do:

Wok on medium heat, add oil and cubed chicken.

Stir and quickly fry for couple of minutes. Add honey, mustard, curry powder, salt and pepper and whilst stirring keep on cooking the chicken.

When ready carefully add the cream (don’t let it curdle) and the crushed peanuts. Simmer for a couple more minutes.
That’s it – serve with Rice or as in my pictures, with Penne and maybe some blanched spinach or broccoli.

Tips:
Place unsalted peanuts into your Mixy and ‘blitz’ only for a couple of seconds. Don’t make them smooth, you will want a slight bite.
This sauce is really simple but so nice, maybe you like to make a little bit more!?
If you have no fresh pineapple, then use tinned one.

Velvety Carrot Soup with an Asian Twist

I really can’t help it, but nearly every time I eat Carrots in any kind of form, shape and sizes, I hear a tiny little voice of my late Mom “Mutti” …….’do eat your carrots now – they are good for your eyes and will make you see in the dark….”

At that time I was little and like most children I of course believed her. Not that I hated carrots, no not at all, quite liked them actually and now that I am grown up I truly love them. As vegetables, prepared in many many different ways, as soups (after all I was born in Germany and we do love our soups), as salads for when I want to be extra kind to my body and as nibbles.

Even now, typing this page, I have a small plate of freshly cut carrot sticks next to me and keep munching on those, like a little Rabbit – maybe Grandpa knew in his wisdom why he nicknamed me “Kaninchen” (little Rabbit) all those decades ago. (But mind you, in this tremendous heat we are having here right now I really would love an ice-cream or even two, but……).

Today we all surely know that Carrots are one of the healthiest foods around containing over 100 % of Vitamin A; so we should make food like carrot part of our everyday diet.

Velvety Carrot Soup with an Asian Twist

= this should not take you more than maximum 30 minutes =

I was greedy and used up all the carrots which needed to leave my vegetable compartment. I did not weigh, so just do what I did, and go by your eyes, appetite and what’s in your own fridge. The measurements given therefore are for those 2 large bowls of soup I made for my husband Jo’s and my Lunch with a little bit left in the pot.

Ingredients

2 x medium sized onions, cubed
4-5 x large carrots, peeled and chopped
5-6 x cloves of garlic, crushed (our garlic is really small)
Salt, black pepper to your own taste
2 x Tbsp of Peanut butter Sauce
1-2 x Tbsp Lingham’s Hot Chilli Sauce
¼ – ½ x cup of Coconut milk (optional – or use some milk)
3 x cups of earlier prepared Vegetable Stock (I used KNORR cubes)
Tiny bit of oil for sweating the onions

Method

Heat oil on medium heat, add onion and garlic, stir and after maybe 5 minutes add the carrots.

Season, stir and add the vegetable stock, stir again and cover pot.
Now reduce heat to simmer and cook until vegetables are nice and tender. It only took me 15 minutes since I cut everything fairly small and also I wanted to retain a certain “crunch”.

I do not have an immersion blender – yet! – and therefor ‘blitzed’ the soup in stages in my Mixy with the PB Sauce and the Lingham’s. (You can also add a few more peanuts in for good measure, if you like).

That’s it really. Pour into soup cups; sprinkle some coriander, tiny carrot slivers and a couple of drops of thick coconut cream on top and serve.
This goes very well with just slices of brown-bread toast or Arabic bread, slightly warmed.
